Cherry Nanaimo Bars

Makes about 3 dozen

Primer
1 cup chocolate chips
1 / 4 cup butter or margarine
1 / 4 cup powdered sugar

1 egg 1 3 / 4 cup crumbs
graham crackers 1 / 2 cup chopped almonds

Trim 1 / 4 cup butter or margarine, melted 2 cups
icing sugar 2 tablespoons
tablespoons milk
1 / 2 c. tsp almond extract
1 / 4 cup maraschino cherries, chopped (well drained)

Frosting 1 cup chocolate chips 2 tablespoons
tablespoons butter or margarine

Melt 1 cup chocolate chips and 1 / 4 cup butter or margarine in a water bath. Remove from heat. Add 1 / 4 cup powdered sugar, then egg, stirring. Add bread crumbs and almonds and mix well. Press the mixture evenly into a 9 inch square pan. Cool.

Beat together 1 / 4 cup butter or margarine 2 cups powdered sugar, milk and almond extract until mixture is creamy (the mixture dyeing with food coloring, if desired) (I have replaced the milk with the maraschino cherry syrup). Add cherries and mix well. Spread over bottom layer and let cool.

Melt 1 cup chocolate chips and 2 tablespoons tablespoons butter in a bain-marie. Cool. Spread this mixture over the layer with cherries. Cool at least 2 hours before serving. Cut into bars and store in an airtight container in refrigerator.
